Created by Australian bartender Sam Ross, you’ll be seeing the Penicillin cocktail on most of your drinks menus as it’s becoming a modern classic.

Ingredients

  • 1.50 oz Dewars blended Scotch

  • .75 oz Honey syrup

  • .75 oz Lemon juice

  • .25 oz Laphroaig Islay single malt scotch whiskey

  • 2 quarter size slices of fresh ginger

  • Slice of candied ginger, for garnish

Directions

  • Muddle the fresh ginger pieces in a cocktail shaker glass with the honey syrup.
  • Add the blended scotch and lemon juice.
  • Fill with ice and shake to chill.
  • Fine strain into a double old-fashioned glass filled three-quarters full with ice.
  • Float the Islay whisky on top of the drink and garnish with candied ginger.
